Blueberry Oatmeal Muffins -- I'm going to make these over and over again! These will make fantastic breakfast muffins! I used banana instead of the applesauce and the agave syrup, and they came out perfectly. I'm having trouble not eating them all right now.
MK made a batch of these muffin cups last night with the intention of eating them throughout the week...but they may not last that long. Oops. 12-muffin tin + 12 eggs + any veggies/sausage/bacon you like + bake at 375 for 20-25 mins and you've got breakfast for a whole week! I recommend putting them in muffin cups to cut down on clean up too - always a plus. Definitely will make this recipe again!
