Grain-Free Banana Pancakes - only 3 ingredients.

    Very good.....added 1T coconut flour for additional consistancy...key is to make small 3" pancakes and cook on very low temp until dry.

    I made a double batch of these and baked them in the oven in a muffin top pan...worked perfectly...they are fluffy and moist...may need to cook a bit longer to ensure they are completely done.

Baked pancakes.....I used box pancake mix while camping and it was perfect! Had it two days in a row :-)

    Made this today...OMG...so good...very moist, forgot the so low fat, no bourbon, didn't miss it, used about 5 very, very ripe bananas. Will definitely make again.

    We had this for dinner last night and it was extremely good. Too spicy for Mizz M, but very good....served with cheese and sour cream on top.

taco pie! Frozen pie shell, 1 lb browned ground beef w/ taco seasoning, put meat into uncooked pie shell, bake at 350 for 15 minutes, top with shredded cheese and crushed Doritos, bake for another 15 minutes until crust is done and cheese is melted, spread sour cream over the crushed chips, top with lettuce and diced tomatoes...add salsa for a kick. I'll try with refried beans next time :-)

    Made this in the crockpot, doubled the recipe, used frozen chicken, and turned out very soupy. Made excellent chicken tacos with the meat and will use the soup base and leftovers for tortilla soup or salsa chicken and rice.

Pepperoni Stuffed Chicken Breasts

    I made these for dinner tonight, but had to do a little substitution for the bread crumbs since I realized to late that I didn't have any. I pounded my chicken thin, used turkey pepperoni and colby jack cheese as the filling and rolled the chicken up, brushed with butter and rolled in crushed cheese its. I didn't brown them, just baked them, seam side down, in a 350 oven for about 35-40 minutes. Huge hit with the family. Served with a side of steamed green beans.

    Made these and we loved 'em...so much fun and I added chopped bacon with the cheese so they were complete. Served w/ some fresh fruit. Will definitely make these ones again!

    This was really good.....next time I'll use mini peps to make it easier to dip into. Add diced green onion tips and some garlic.

    This had great flavor, however it was very salty. I will make again, however I will use homemade ranch dressing mix vs the packaged stuff to see if that helps with the saltiness.

    I used the leftovers of this to make a chicken lasagna with a layer of spinach added between the sauce and cheese. It was fabulous!

    Made this tonight for dinner. Unrolling the loaf of bread was doable, but not very easy, the dough tore and had to be pushed back together. I used low sodium deli roast beef, muenster cheese, I added a layer of diced caramelized balsamic onions, roast beef and cheese again. Rolled together and baked seam side down for 40 minutes. This was good! I did not have au jus, but due to the moisture of the onions, it wasn't really needed. I will make again.

    used a 6 lb pork butt, about 1.5 T of sea salt and 2 T of liquid smoke. Trim roast of biggest hunks of fat, rub sea salt into the meat all over, then rub smoke all over the meat. Put in crock pot w/ 1/2 cup of water and let it cook on low for about 20 hours. So so so good.....will definitely make again, only next time with a bigger hunk of meat!

Oh my...made this for dinner tonight with sea salt and garlic powder...so good! Find the smallest spears you can for this and cook just until al'dente.

Bag of frozen chicken in the crock pot. Put the cream cheese, corn, salsa and black beans on top and let it go for 6-8 hours on low. shred when done. serve with chips or as tacos.
