Avocado Chicken Salad: 2 or 3 boneless, skinless chicken breasts,1 avocado,1/4 chopped onion, juice of 1/2 a lime, 2 Tbsp cilantro,salt and pepper, to taste. Cook chicken breast with onion until done, let cool, and then shred. Mix with all other ingredients. Super good. Loved it!!
Panda Express Chow Mein- 1/4 c. soy sauce, 1 T. brown sugar, 2 cloves garlic, 1 tsp. fresh ginger, black pepper to taste, 2-3 T. vegetable oil, 3 (5.6 oz) pkg refrigerated Yaki Soba noodles (found in the produce section of the grocery store.. usually the 3 packages are sold together in one 17oz. pack) 2/3 c. celery, 1 medium onion, 2 c. cabbage. Super good!! I miss Panda Express and it took me back!
