Creamy Fudgesicle Ice Cream After lots of research, I finally found a combination of recipes that created EXACTLY what I was looking for. I usually make ice cream without a machine in the freezer. I read that boiling the ingredients prior to freezing will keep ice crystals from forming and, sure enough - it worked! Plus, I think it really improved overall taste and texture. 1 cup heavy cream (substitution 3/4 C milk, 1/3 C butter, 1 tablespoon cornstarch if low-fat milk) I used 2% lactose free for this recipe, but you can use whatever your preference. I also used REAL butter so I'm not sure how margarine will work.) 2 Tblspn fresh lemon juice 2 Tspn vanilla 1/4 Tspn salt (I used fine sea salt but regular should work great too.) 8 oz cream cheese 1/3 - 1/2 C cocoa (to taste preference) 1 C chocolate syrup (to taste preference) Heat ALL ingredients until boiling. Let cool. Pour into a freezer-safe bowl. Cover & freeze until firm. Stir occasionally to keep from being completely solid. Takes a good full day to freeze this properly. (Or can pour into popsicle freezer container). This turned out very rich and creamy and very tasty!
