Crockpot Italian Chicken 4 chicken breasts 1 packet dry Zesty Italian dressing (Regular is fine but I like zesty better. Sometimes I use a packet and a half.) 1 (8 oz) package cream cheese, softened 1-2 cans cream of chicken soup (depending how cream cheesy you want it) Place the chicken in a crockpot and sprinkle Italian dressing over it. Combine cream cheese and cream of chicken soup in a small pot over low heat and pour over chicken. Cook on low for at least 4 hours. You can leave it in there all day. Once chicken is done you can leave the chicken breasts whole, cube it, or even shred it. I always cut the breasts into tenderloin size strips. If you feel the sauce is too thick you can thin it to your preferred consistency with a little milk. Serve over pasta or rice.
Brown Sugar and Balsamic Glazed pork loin- this was delicious and very easy! I did not use my crock pot, instead I seared the pork loin on all sides in a roasting pan, then transferred it to a 450F oven and continued cooking until internal temp reached 145F. Meanwhile, heated and thickened glaze on stove and then brushed it over the pork loin. Sliced, served with remaining glaze. Excellent!

MEXICAN LASAGNA – 2 Variations using Beef
Crock Pot Ribs- omg! soooo good! and the kids loved them, too. I did improvise on the recipe, added a cup of dr pepper to the bottle of sauce to get all the sauce out ;) and added some garlic salt plus some other good New Orleans spices...and when she says to not skip the broiler part, she is so right!

The leftovers are also good and can be used in tortillas for a different meal. This is one recipe I have fixed several times and it will stay on my menu.
Grilled Yellow Pepper - stuffed with beef, quinoa, sauteed onions, celery, carrots, mushrooms, and garlic. Topped with a cute little tomato and some pepper jack cheese. It tasted good.
