2 tablespoons olive oil, divided 2 large eggs, beaten 2 cloves garlic, minced 1 small onion, diced 8 ounces mushrooms, sliced 1 head broccoli, cut into florets 1 zucchini, chopped 1/2 cup frozen corn 1/2 cup frozen peas 2 carrots, peeled and grated 3 cups cooked quinoa 1 tablespoon grated fresh ginger 3 tablespoons soy sauce 2 green onions, sliced

Indian-Style Red Lentil and Sweet Potato Curry. All I had were green lentils when I tried this - still delicious, but it just took longer to cook (about 10 more minutes). I did use the cayenne - still very mild. I served it with Basmati rice made with 2 parts water and 1 part coconut milk. Yum! A big hit at the potluck!
My favorite cheap and easy option for a potluck! Pasta with garlic powder, sea salt, and Italian dressing! Add a splash of light olive oil and/or Parmesan cheese as an extra option! Serve cold.
