Roasted cauliflower and mushroom quinoa salad with goat cheese
Chickpea-Brown Rice Veggie Burger: 2 cups drained chickpeas mashed to 1 brown rice. Add minced shallot, garlic, fresh parsley, salt and pepper, 1 large whisked egg to bind. Make patties the italian meatball way (wet hands, roll and flatten in palm). Serve with mustard, red onions, wrapped in lettuce, tomato slices. Delicious.
