Parmesan Tilapia- Holy cow, was this amazing. I usually do not like Tilapia but in this dish it was great (I think another fish would make it outstanding). My 23 month old son devoured it. I used a little bit too much green onion but other than than perfect. Will definitely make again. We paired it with wild rice and lemon roasted asparagus.

Want an amazing and healthy side dish? Marinate sliced tomatoes with balsamic vinegar for 4-6 hours. Bake at 350 for about 7 minutes or a little tender. Meanwhile, sauté spinach and garlic with a dash of salt and lemon juice. Put spinach on top of tomatoes and sprinkle with low fat cheese of your choice (I chose Italian blend) and broil til cheese is golden! Ta da. Delish and muffin top friendly!
"OMG Chicken" Just mix Sour Cream or Yogurt (1/2 c) and parm cheese (1/4 c). Spread over chicken breast in a baking dish, sprinkle italian bread crumbs on top and bake for 20-30 minutes. SO moist and tasty!

Crockpot Lemon Chicken - Put cube of butter in bottom of crock pot. Lay chicken in pot. Sprinkle Italian dressing packet over chicken, drizzle with lemon juice, pop the lid on. Cook on High 4-5 hours, or Low 6-8 hours.
