SPICED LENTIL SOUP WITH COCONUT MILK - SPROUTED KITCHEN - super yum. didn't take much time or effort. had everything on hand except the lemongrass - and i just bought a jar of the dried stuff, so now will have it all around. used red lentils because it is what i had. doubled the greens (used rainbow chard) because we needed more veggies for the day. totally doing this one again.
White Bean and Chicken Chili Recipe - it was meh. i didn't do it in a slow cooker - it may have made the difference. as per the comments i added more veggies. ended up with too much broth and not enough beans, so thickened with corn starch. not enough of a winner to do it again.
Frenchy Toast Casserole - made per the comments with less sugar and butter, mixing it directly into the egg mixture. Made the night before, baked up easy in the morn. Served with both berries and syrup and let folks choose. Will bake with sausage right in the mixture next time I'm not cooking for a group that includes vegetarians. Good stuff.
Healthy Baked Chicken Nuggets | Skinnytaste - used plain GF breadcrumbs, and just added s and italian seasoning - they didn't crisp up as much as they perhaps should have, so i put the broiler on - super easy and tasty and way cheaper than the gf chx tenders i buy at the store....
Chicken Parmesan Meatballs - used dried parsley, and didn't have any fennel (next time i'll make sure to get some); didn't do it with pizza sauce and extra cheese, just cooked for 20m, then burned the broiler on for the last few minutes to brown them a bit - and then just ate them as is - quite tasty!

Spinach Mozzarella Egg Bake - good stuff! very thin which i wasn't expecting - but cuts well and comes out of the pan easily - yummy hot or cold - definitely make this again
Basil Chicken in Coconut Curry Sauce... spiciness depends on the chilis used - i'd use fresh basil next time - made a double batch this time around and it was a lot of cutting and grating (chx, garlic, ginger, jalepenos, onions) - but very tasty - needs a good amount of salt.
Baked Oatmeal Casserole... did ours with what we had on hands - tamari almonds and frozen blueberries. ended up much more wet than i would ideally like - more oats next time, and maybe we'll try it with the recommended walnuts and raspberries instead.
Garlicky White Bean Soup with Dark Greens - added bacon. what can i say. i love bacon. also used canned cannelini beans because i was in a hurry - easy, ready in 45m with very little prep time. the kid loved it - and she doesn't particularly like beans nor does she have a big preference for garlic. ate with good bread, and topped with parm, as recommended. needed lots of salt.
DIY Dry Shampoo - for brown hair is cocoa powder and cornstarch - WAY better than the white stuff which just looked like bad brushed out 80s hairspray no matter how much I try to brush it out. And it smelled WAY better. The only downside? A puppy who wanted to keep on licking my chest and neck.
The girl had a blast! - Magic Mud!...Mix 2 cups of cornstarch and 1 cup water in a bowl. To color it, add a few drops of food coloring to the water before adding to the cornstarch. Takes some effort to mix the water and cornstarch. This defies Newton’s third law of motion–for every action, there is an equal and opposite reaction. If you quickly smack it with your hand it immediately turns into a solid, instead of splashing or moving. If you slowly move it reacts like a liquid....
freezer egg McMuffin sandwiches for busy mornings - we did them with bacon and spinach. still haven't quite perfected reheating in the toaster oven - but we're almost there. takes a full 30m with a toaster oven that has been heated a bit first. super tasty and quick in terms of prep (unwrap, take the top part of the english muffin off, and leave for 30+m)
Slow cooker ham and white beans. Cheap, easy - even using nitrate free ham from the coop, and gluten free cornbread mix, this was inexpensive and tasty. Served it with greens sauteed with garlic and onion. Enough for dinner for three, lunch for two the next day, plus a freezer stash of another two or three lunches.
Butter chicken (Chicken Makhani) - dudes. SUPER yum. i guess with the amount of cream and butter, it'd better taste good. but WOW. and if you've got all the spices, you probably have what you need to make this - which is always bonus in my book. but the chx needs to be marinated overnight - threw me for a loop and put me off a day. might try yogurt next time instead of cream to cut the naughty quotient a bit.
