I <3 Cooking & Baking

I love to cook and bake, I'm not humble or discreet about it. For nearly two years, I've cooked and baked solely off of pinterest recipes and my meals end up delicious nearly all of the time, so deal. However, I'm a lazy cook; I don't like things that are overly complicated, have too many steps, involve hot peppers, I leave them out every time, and I simplify as much as I can. My comments reflect these simplifications and tips for making the meal easier to create or taste better.

These are yummy and filling so they make a great mid-morning or afternoon snack. Lauren's Tip: seriously follow the instructions to not mix the batter too much and fill the muffin cups 2/3, there should be about 12 muffins, roughly, and they'll look perfect if you follow the recipes tips.

Baked Scallops (serves 6): 2 lbs scallops rinsed & drained, salt, 4 tbsp unsalted butter, melted , 1/2 cup bread crumbs, 2 to 3 tbsp chopped parsley, 2 garlic cloves crushed, 3 tbsp olive oil, S Preheat oven to 400ºF. Place scallops, melted butter & garlic in a bowl, season w/ S to taste. Stir gently to combine. Transfer to a baking dish. Combine bread crumbs, parsley and olive oil in a bowl. Sprinkle this mixture over the scallops and bake in 400 oven for 15 min until firm & browned.
