Salmon Tacos with Jalapeno Cream - I am not a huge paprika fan so I didn't use it.
Southwestern Shepherd’s Pie - I used skim milk/yogurt butter and half the cheese to lighten it up - I just did the 1C layer and skipped putting it in the potatoes. Next time I'll use low-fat cheese. I also used jalapeños instead of bell peppers.
Lentil Stew with Cornbread Dumplings - love this and it made great leftovers. My only complaint is that all of the liquids cooked into the lentils/veggies. I'll add more broth next time.
Black-eyed pea Migas - LOVE this. I made some adjustments: BEP - I heated them because I prefer that, and I saved the onions, jalapenos and garlic for the eggs. I also used rotel instead of tomatoes and cilantro because that's what I had in my house. Eggs - I cooked the onions and jalapenos then took them out of the pan, cooked the eggs, and added everything else. I also halved the recipe for everything but the eggs (I used 3) for two of us.
Turkey Santa Fe Lettuce Wraps - I used chicken breast, and I think you can pretty much use any veggies you have around the house. I used extra peppers, onions, jalapenos, etc... Next time I'll probably use red or yellow onion instead of green onions.
