I modified this recipe to make what I dubbed Pumpkin Pie Cookies--a great way to welcome fall. Reduce flour to 2 1/4 c., add 1 1/2 c. oatmeal, up the spices to 1 tsp cinnamon, 1/2 tsp ginger and 1/4 tsp allspice.
