Broccoli Cauliflower Casserole Saw this on g+ so I had to share it here. Use skim milk and low fat or fat free cream cheese to make this a bit healthier. If you have high cholesterol, you'll want to watch the salt and butter as well. Remember, some fat is good for you so don't worry about getting rid of it all.

4-6 raw chicken breasts, new potatoes, green beans (fresh or canned-really any green veggie would work. Broccoli is good, too). Arrange in 9x13 dish. Sprinkle with a packet of Italian dressing mix and then top with a melted stick of butter. Cover with foil and bake at 350 degrees for 1 hour.

This recipe came from someone who actually worked at a Mexican restaurant and passed along this recipe on how to make Queso Blanco Dip (white cheese dip) like they do in their restaurant.
Dump 1 envelope of taco seasoning, 6 boneless, skinless chicken breasts & a jar of salsa in the crockpot, stir and cook on high(4-6 hrs.) or low(6-8 hrs.) Should be able to shred with a fork. Place meat mixture in tortillas and top with your favorite toppings!
