Gwenyth Paltrow's No-Fry Fries: 2 lrg russet potatoes; 2 tbsp olive oil; coarse sea salt. Heat oven to 450°. Cut potatoes in half horizontally; cut each half into 1/3-inch-thick fries and place in a bowl of cold water. Remove from water and dry thoroughly. Toss with oil and sprinkle with salt. Place fries on a cookie sheet. Roast until browned and cooked through, turning occasionally, 25 minutes.
Gwyneth Paltrow's No-Fry Fries. (Just potatoes, olive oil and salt @ 425 degrees. The trick is to soak potatoes in cold water first!) (recipe in her new cookbook, great recipes!)
Healthy Summer Side Dishes
Basil: Chicken Gyros with Tzatziki Sauce CBS Note: I did not marinate the chicken or grill it. I simply threw all of the spices and chicken into a skillet to cook (only used a little oil and about 2 cloves worth of garlic). I used dill instead of mint for the tzatziki sauce. It was good but I felt like it was missing something.

Cannoli Dip. Being the Brooklyn Guinea I am, and having had a cannoli in my mouth before a passifier, I'm gonna demand there be some citron in here. And I'm searching for an easy enough shell recipe to pin that will adapt with minimal effort into a chip you can make and break to serve with this. If it ain't a cannoli shell, it's not gonna taste right... --Cas
