Watermelon "Cake" -- cut a 3-inch slice from center of 1 seedless watermelon. Trim rind from slice. Place on a platter. Remove green tops from 1/2 pint strawberries. Thinly slice the fruit. Overlap slices around base of the watermelon. Whip 2/3 soy cream and 2 tbsp sugar to stiff peaks. Spoon cream on top of watermelon slice and sprinkle with 1 pint raspberries and 1/4 cup chopped pistachios.
