Easy Chicken Eggplant (Aubergine) Parmesan. Not the most appealing photos, but sooo good. I should have taken my own photos and added it. Some recipes notes & alterations: 1) I used zucchini instead of eggplant because the store was out of it. Great alternative. 2) I added some garlic salt to the zucchini before adding the breadcrumbs. 3) Only used a 1/2 lb of mozzarella, just enough to cover evenly. 4) Will probably add the penne noodles next time.
