Stuffed grilled peppers were an excellent addition to the chicken. I grilled my pepper halves ahead of time then stuffed them with cooked brown rice that had garlic, onion, grated romano cheese, basil and leftover roasted grape tomatoes mixed in. Fill your peppers full with the rice mixture then top them off with fresh mozzarella and just warm in the oven until the cheese melts
