I made a syrup with sugar and lemon juice and poured it on top for added lemon flavor. - MGR
Pumpkin Bars and Cream Cheese Frosting.
Caprese bites. I made these last weekend for a party I went to. They were gone in minutes. I used the mozzarella balls marinated in olive oil and herbs, fresh basil & sweet grape tomatoes. I used colorful Long toothpicks & in the middle of the platter, I placed a small bowl of Balsamic for dipping. So delish & easy!

Southwestern Egg Rolls with Avocado Ranch Dip -- These were wildly easy to veganize. I used full-size wraps, though; I'm not patient enough to roll up a bunch of tiny wontons. These were a huge hit with all our guests, even the meat-and-potatoes guys! The sauce was only so-so, though -- more like a thin guacamole. After the first go, we just started serving them with our favorite guacamole.

Chicken Enchilada Pasta-OMG! I made this tonight and it was frickin' amazing. The only thing I changed on the recipe was the chicken. I slow cooked skinless/boneless chicken breasts for 6 hours with one 16 oz bottle of salsa and a taco seasoning packet. I then shredded the chicken and put it back in the slow cooker to soak everything up. I can't rave enough about this recipe. DELICIOUS!
