Bubble up enchiladas--This is absolutely delicious. I used ground beef in mine, but you could easily do this with shredded chicken or pork. Was super easy to throw together. The only problem I had with it was my own kitchen-fail: I had my oven rack set too low, so some of my biscuit dough didn't cook. Lesson learned!
