Thai Beef with Peppers | The Pioneer Woman Cooks | Ree Drummond Mike made for dinner tonight. So good :) Skipped cilantro and ginger. Added carrots, broccoli, yellow peppers and used flat iron steak as opposed to flank. This was one of the BEST Asian dishes we've had. Next time we will add even more veggies. Great dish!

These enchiladas are healthy AND delicious. I made just a few changes to the recipe and my family is crazy about it. Don't use Rotel or cilantro that's called for in recipe. I used: 1 3/4 cup shredded, cooked chicken 1 chopped onion 1 small can chopped green chiles Sauté onion til soft, add chicken and chiles. Heat til warm. Combine: 1 can low fat cream of chicken soup 2 5.3 containers ff plain Greek yogurt 1/4 cup milk Heat in saucepan til warm 7 fiber one tortillas Fill each tortilla with 1/4 cup chicken mixture, roll up tortillas, place seam side down in greased baking dish, pour soup mixture over. Top with 1/4 cup or so 2% Mexican cheese Bake 350* for 30 minutes. Serve with rice and corn. We all LOVED it. Gonna be on regular rotation at our house :) ~Lynn

I seldom enjoy ham. This ham was AWESOME. So easy and so delicious. I will ALWAYS use this crockpot recipe. We only used one cup of brown sugar. It seriously did not need any more. Our ham didn't fit, so we covered the crockpot with aluminum foil then placed the lid atop to hold it down. Got a great deal on our ham after Christmas!

NO BAKING REQD!! Ice Cream Sandwich cake that is to die for!!! My sister and I made one of these this summer. Soo easy and delish!!~Lynn

This was really delish, but way, way, way too spicy with all the chiles they call for Tried once without rotel and preferred it that way. Replaced sour cream with ff Greek yogurt. We all LOVED it. Gonna be on regular rotation at our house :) ~Lynn

baked zucchini fries. Not too time consuming. We all really enjoyed them. Next time I will add some garlic powder. ~Lynn

If you have a burger craving, this is perfect for you! Crispy flatout wraps with cheese, hamburger filling, and your favorite toppings. These were a nice change from regular burgers. Using two point wraps and less cheese than called for, we figured these out at 7 points plus. ~Lynn

Cheese stuffed chicken--delish!! We ALL loved it. It was chicken breasts pounded thin and stuffed with a light cream cheese and herb mixture. Wrapped up, dredged in flour, egg and cornflake crumbs. Next time I will flatten the chicken even more and use toothpicks to try to keep more filling in. ~Lynn

Salisbury Steak made this tonight and served over noodles. We all loved it. I followed the ingredients exactly, but made smaller patties and just cooked in a frying pan. ~Lynn

Toss chopped peppers, potatoes, zucchini, red onion and sausage (I used turkey kilbasa) with olive oil, salt, pepper and garlic powder. Seal in an aluminum foil pouch and bake at 400 for 40ish minutes. You can also grill this. We ate it for dinner last night and it was really good. Super easy to prepare and cleanup! Will make again!

Made mini meatloaf muffins for dinner tonight. Used my regular meatloaf recipe, plopped it in the muffin tins, cooked 375 for 30 min. Topped with a piece of cheese, back in the oven for 5. Delish!~Lynn

Grilled Sweet-and-Sour Meatball Kabobs Replaced the peppers with zucchini and these were delish! Fast and easy and a different way to eat the same old :) ~Lynn

Mock Wendy's Frosty: 80 calories, 0.5 g fat. Blend:1 C milk, 2 T SF & FF Choc Pudding Mix, 1 t Vanilla Extract, 1 t Unsweetened Cocoa, 2-3 pk splenda 2 T Cool-Whip Free, 7 Ice Cubes ~I used 16 ice cubes (maybe mine are small) and threw in some pb2 powder. Was the most amazing, huge, chocolate peanut butter shake for 5 WW PP. ~Lynn
