To estimate the temperature of a fire for cooking, carefully hold your palm a few cm away from the embers. Count how long you can hold it there for. 6-8 seconds is 250-300°F (120-150°C). Slow. 4-5 seconds is 350-400°F (175-200°C). Moderate 2-3 seconds is 450°F (230°C). Hot. 1 or less is 500°F (260°C) or higher. Very hot.
