Avocado Chicken Salad: 2 or 3 boneless, skinless chicken breasts,1 avocado,1/4 chopped onion, juice of 1/2 a lime, 2 Tbsp cilantro,salt and pepper, to taste. Cook chicken breast until done, let cool, and then shred. Mix with all other ingredients.

"OMG Chicken" Just mix Greek Yogurt (1/2 c) and parm cheese (1/4 c). Spread over chicken breast in a baking dish, sprinkle italian bread crumbs on top and bake at 425 degrees for 20-30 minutes. SO moist and tasty!

Ingredients 1- 15 oz can corn 1 can black beans 2 avocados (cubed) 2/3 cup chopped cilantro 8 green onion stalks, sliced 6 roma tomatoes Dressing: 1/4 cup olive oil 1/4 cup red wine vinegar 2 cloves minced garlic 3/4 teaspoon salt 1/8 teaspoon pepper 1 teaspoon cumin Mix first 6 ingredients together. Combine dressing ingredients and pour over corn mixture. Serve with tortilla chips.
