Eggplant Relish! 3 tbsp oil, Chopped 1 eggplant, onion, 2-3 cloves garlic & 2-3 chili peppers. Mix 3/4 c vinegar with chili powder, 1 tbsp ea fenugreek & balsamic vinegar, 1 tsp coriander, 1/2 tsp dry mustard, 1/4 tsp ea turmeric & salt. 1/2 c br sugar. Heat oil; sauté eggplant 5 min; add onion & sauté 5 min. Add chili peppers & garlic; sauté 3 minutes. Stir in vinegar mixture; bring to boil, reduce & simmer about 10 minutes. Add sugar & cook 2 minutes. Bottle, process 15 minutes.
