Coconut Poke Cake--1 (18.25 oz) package white cake mix; 1 (14 oz) can cream of coconut; 1 (14 oz) can sweetened condensed milk; 1 (16 oz) pkg frozen whipped topping, thawed; 1 (8 oz) pkg flaked coconut; Prepare & bake white cake mix. While still hot, using a fork, poke holes all over the top. Mix cream of coconut & sweetened condensed milk. Pour over top of the hot cake. Once cake has cooled completely, frost with the whipped topping and top with the flaked coconut. Keep cake refrigerated.

Pineapple Coconut Snowballs Recipe ~ 1 package (8 ounces) cream cheese, softened. 1 can (8 ounces) crushed pineapple, well drained. 2-1/2 cups flaked coconut. In a small bowl, beat cream cheese and pineapple until combined. Cover and refrigerate for 30 minutes. Roll into 1-in. balls; roll in coconut. Refrigerate for 6 hours or overnight. Yield: about 2 dozen.
