I used these guidelines with my grill pan and served it with herb butter. It was yummy! When I flipped it over, I should have increased the heat again. I realized at the end of the cooking time it was still pretty red around the edges (about 1.5 inches thick) of the flipped side, but it was b/c I'd turned down the heat like the recipe says. I turned the heat back up and left it a few more minutes.
