Cupcake Tacos - I have made these before and they are really good. They definitely can be eaten as a meal, instead of an app, as they are quite filling. I used Tostito's brand chunky salsa (mild) and salsa con queso, and I did not use reduced fat cheese (sorry, but yuck). I mean if you're making something called "Cupcake Tacos" let's not pretend that using diet cheese is going to make it healthier. Also, I tried them with ground chicken instead of beef and they were really yummy. Enjoy!

Thai Pineapple Fried Rice -- made this for lunch...hubby loved it. Said he would have loved it even without the shrimp. Great as is, though next time I may substitute my Thai red curry paste in place of the red chilies and curry powder just because Thai curries are paste based while Indian curries are powder based. Either way, this recipe is a winner!
Directions: In a sauté pan over medium heat, warm the olive oil. Add the garlic, red pepper flakes and paprika and sauté for 1 minute until fragrant. Increase the heat to high, add the shrimp, lemon juice and dry white wine, stir well, and sauté until the shrimp turn pink and are opaque throughout, about 3-5 minutes. Season with salt and black pepper, sprinkle with the parsley and serve.

Melt a stick of butter in the pan. Slice one lemon and layer it on top of the butter. Put down fresh shrimp, then sprinkle one pack of dried Italian seasoning. Put in the oven and bake at 350 for 15 min. Best Shrimp you will EVER taste:) nom-nom-nom

This recipe comes VERY close to my all time favorite spaghetti sauce which I found in the paper about 25 years ago. I use a large onion instead of a small. Only 1 cup of water, 4 T. brown sugar.
