Zucchini Soup - similar to Nona Lim 1/4 cup EVOO 1 poblano chile - chopped 5 medium zucchini - large chop 1/2 quart of low sodium vegetable stock 1 cup of water 1 cup frozen corn 1 bunch cilantro - rough chop Saute on medium heat in large pan the chile in oil till soft (8 min), add zucchini and saute till crisp and tender (5 min) add stock and water and corn (optional - parm rind). Simmer till zucchini is soft (15 min). Remove from heat, remove rind, and add cilantro. Blend. 2 quarts?
