    Ingredients for about 30 zeppole ■250/350 g flour ■2 medium potatoes ■1 egg and 1 egg yolk ■50 g butter ■25gr of fresh yeast or 1 sachet dry instant yeast ■a pinch of salt ■100 ml of milk for coverage ■Caster sugar to taste ■cinnamon to taste Put 200gr of flour on pastry Board and make a hole in the middle forming the classic well. Boil the potatoes, peel than and mash them usin a ricer straight into the centre of the well Put the butter to melt together wuth the yeast in the milk you’ve just warmed up a little Add the eggs to the center of the well and start kneadong carefully with a fork. At the same time pour a little at a time the mixture of warm milk. Now add a pinch of salt.
