Basic Caramel: hardens upon cooling. 1 c. sugar; ¼ tsp. fresh lemon juice; Water+put pastry brush; In 2-quart saucepan, stir sugar, lemon juice,+¼ c. cold water. Brush down sides pan with water to wash away sugar crystals. Boil over med. heat, occasionally brushing down sides pan, til starts to color around edges, 5 to 8 min. Gently swirl to even out color+prevent sugar from burning in isolated spots. Cook til sugar turns med. amber, 30 seconds more. Once mix begins to color, darkens quickly!
Puff pastry, Canned peaches, Cinnamon, Powdered sugar. cut the dough squares to make cuts (see photo), put the filling (I finely sliced peaches, sprinkled with cinnamon) Put on a baking tray, with baking paper and bake in preheated oven for about 20-30 minutes. when cooled sprinkle with icing sugar.
