Made this last Night for Dinner, wasn't able to get large Zucchini, so I made it with Eggplant instead, soooo Yummy!!! I used and stuffed two eggplants, also I used only about 2 Tbl. Butter and a little Olive Oil and dried Thyme!! =) Will definitely make this again and I will continue to use the Eggplant, cause it is just too good!!!
