White Chicken Cream Cheese Chili

I took the THM pancake batter recipe pg. 223, doubled it, and added a tsp almond flavor, cooked up about 6 peeled sliced apples in 2 tsp coconut oil, 6 tsp Truvia, 2 tsp pumpkin pie spice (added about 1/2 to 3/4 cup of water as they cooked), poured the apple mixture in the bottom of a lightly sprayed 9x13 baking dish, poured the pancake batter over the apples. Baked for 30 minutes at 350 degrees. Flipped it over onto a cutting board. Cut it in 12 pieces. Sprinkled a tiny bit of sugar free syrup!

Pumpkin Poundcake~ (Sugar Free, Low Carb, THM S)

LC Beef Stroganoff 1 pkg sliced mushrooms 1 T coconut oil 2 lbs ground beef 1/2 C almond milk 1/4 C heavy cream 1/4 C water 1 1/2 C beef broth 1 tsp xanthan gum 2 tsp salt 1/2 tsp black pepper 1/2 tsp smoked paprika 2/3 cup sour cream Add oil and brown the mushrooms in a lrg skillet. Remove. Add the ground beef, brown. Add milk, beef broth,mushrooms, xanthan gum, salt, pepper and paprika. Stir. Reduce heat to med and allow to simmer for about 10 min. Add sour cream and simmer 5 more min.

I made these tonight. :) Hubby and I thought they were great, girly will like them doctored up for brekkie. Awesome recipe for a bread craving – of course, the fact that I’ve loved popovers since I was a little girl doesn’t hurt!
