    I just can't desecrate the awesome food that is mashed potatoes with imposter vegetables. It just seems wrong. I would rather eat healthy the rest of the time and treat myself with pot roast and mashed potatoes.

    I look at mashed potatoes or anything potatoes and I already want to take a nap. I tried cauliflower once before as a substitute and it was horrible, but this recipe is a bit different. I figured I'll try it and see how close it is to real thing. If it works, I'll be happy with no more snooze land!
