Roasted Cashew Broccoli: 3 stalks of broccoli 1 cup cashews 1/2 cup coconut oil 1 tbs grated ginger root garlic salt pepper/sea salt Pre-heat oven 350. Bring small pot of water to a boil. After boil, add broccoli, boil fr 4 min. Broccoli turns bright green. Remove from pot, strain, put in bowl of ice water, Cover broccoli completely. Set aside. Chop/process cashews, prepare. Put broccoli, cashews on baking sheet. Sprinkle ginger, garlic salt, sea salt, pepper, coconut oil. Bake.

Yum. Roasted Broccoli and Bacon? Yes. TIP: Don't stress about what kind of oil to use... I always use what I have on hand, and it comes out great. I spray this with olive oil in a spray bottle and it works great. And I love this with lots of garlic cloves thrown in, and just a touch of parmesan cheese tossed on there right in the very end. ~~ Houston Foodlovers Book Club
