Stuffed peppers filled with veggies like corn and tomatoes, with ground turkey and topped with cheese. I'm going to use Cabot Pepper Jack Light on mine. Can't wait to try them.
Incredible Baked Meatballs. 1lb hamburger, 2 eggs, beaten with 1/2 cup milk, 1/2 cup grated Parmesan , 1 cup panko or bread crumbs, 1 small onion, minced, 2 cloves garlic, minced, 1/2 teaspoon oregano, 1 teaspoon salt, freshly ground pepper to taste, 1/4 cup minced fresh basil Mix all ingredients with hands. Form into golfball sized meatballs. Bake at 350 degrees for 30 minutes. #BakedMeatballs
homeade salsa Ingredients 3-4 pounds tomatoes, I had a mix of large grape and yellow 1/2 of a small red onion, peeled 2 or 3 small jalapeño peppers, depending on heat preference 1 clove garlic, minced Large handful of cilantro 2 splashes of red wine vinegar (about a 1/2 teaspoon) 1/2 of a lemon or lime, juiced Salt and pepper to taste
