Gorwydd Caerphilly is a Welsh Cheese with a hard, brown/grey rind that gives way to a creamy yellow coloured interior. Its earthy mushroomy flavour is sublime, with a crumbly centre that gets softer and stronger toward the rind. Pair with a basic white burgundy - nothing very fancy required.
