Linden says: Warm Zucchini, Corn and Black Bean Salad--A nice, simple, healthy southwestern recipe. This is just a great easy standby meal. Would be delicious cold in the summer and makes a great taco (maybe add a little avocado and queso fresco). I had to use one zucchini instead of two, because they were all huge and it seemed like a lot--this was a good call, as it turned out. I also used one can of corn and one can of beans instead of working from scratch, which was just right.
Hopefully this will help keep fruit and veggies from going bad too early. Smart things here. I have practiced many of these most of my life. I will add Tomatoes. I do not refrigerate them ever. I have a hanging basket in the kitchen for my tomatoes and if I cut it I eat the entire tomato then and there. They act of chilling a whole or cut tomato sucks the flavor away immediately.
