These are a few of my favorite things.
Eggplant, tomato, basil and feta cheese… Salt eggplant, let sit for 30min, pat dry, grill in skillet a few minutes each side. Place in lightly oiled baking sheet, top with evoo/garlic/basil/feta, top with tomato slice, top with more garlic/evoo/basil/feta, and bake at 400F for 15 minutes.
Bananas Foster Bread Pudding...3 eggs, 2 egg yolks, ¼ tsp nutmeg, 1 tsp cinnamon, 1 c very ripe bananas, pureed, 1 tsp vanilla extract, 1 c sugar, ½ c light brown sugar, firmly packed, 1 ¾ c heavy whipping cream, 1 large French bread loaf (5- 6 c torn up)...
Cinnamon Roll Bread Pudding~Absolutely amazing. Great use for those leftover cinnamon rolls that get stale before you eat them. I made a vanilla milk to go over the top. 1 cup milk, 2 Tbsp. butter, 1/3 cup sugar, 1 tsp vanilla. Boil 3-4 minutes. Let sit for 5 minutes then pour over hot bread pudding. I can't stop eating this stuff.
Mexican Chopped Salad with Greek Yogurt Cilantro Lime Ranch - this salad is unbelievably delicious and so healthy! Seriously LOVED it and will make it again and again!
