Ultra-Crispy Roast Potatoes. One of my favorite side dishes. Microwave quartered potatoes for 10 minutes. Drain water. Drizzle a fair amount of olive oil over the potatoes, gently toss the potatoes, and sprinkle with oregano. Put in a hot oven 450 degrees for about 20-25 minutes until crispy. Watch closely.

Zucchini Fritters with Chili Lime Mayo. I made these last night (5-6-13). They were just as good as they look! OMGoodness! I made 1/2 recipe and it easily serves 3 people. Came out light and airy, not greasy, yet very moist. Only things I changed were to add a light sprinkle of garlic powder to the fritter batter and to double the lime in the dipping sauce. Would make a great meatless summer meal served with a fresh fruit salad. So good!!!
