Potato Nibbles

Awesome recipe for delicious vegetarian shepherd's pie. This dish is so hearty and filling, you'll never know it is low in calories! The ultimate comfort food...without the guilt!

Loaded Baked Potato Casserole-delish!!! it was super easy and tasted wonderful. would be good for a potluck dinner!

1 baked potato 1 Tbsp butter 2 eggs 2 strips bacon, cooked. 2 Tbsp. shredded cheddar 1 Tbsp. fresh parsley, chopped. salt and freshly ground black pepper. Place 1/2 tablespoon of butter in the middle of each "bowl". Then gently break an egg into each "bowl", careful not to break the yolk. Top with bacon, cheese, parsley, and then season with salt and pepper. Bake at 350 degrees F for 25 min.

Latkas... Potato Pancakes... Latkes are all Europe (and Kansas).  Often by a different name, from Ireland to Russia... Sweden all the way south to Africa, all claim this dish as their own. Me, I discovered them in a New York Deli back in the 80's and have loved them ever since... So simple and nostalgic for me. Here's an easy to follow recipe, complete with LOTS of photo instructions.

Make these potatoes at holiday time for big dinners. They are easy to make: Just mash potatoes plain with butter or you can add yummy ingredients like cooked bacon, cheese, parsley, green onion etc. Stuff in to a greased muffin tin, run a fork along the top and brush with melted butter or olive oil. Bake at 375 degrees or until tops are crispy and golden. These are always a family fave in my house!!
