When it's just me for dinner, I love to make this: Cucumber and Cream Cheese on Protein Bread... I mix a half-envelope of Good Seasons Italian Dressing Mix with a carton of Whipped Cream Cheese and blend well, spread the mixture on a good multi-grain protein bread, and top with sliced cucumbers. baked cream cheese spaghetti casserole made this tonight with a few modifications. a. i used rigatoni instead of spaghetti. b. i used lite cream cheese and added half cup of mozzerella to the pasta mix. c. used italian meatballs instead of beef. i cut up the meatballs into quarters. d. i slow cooked it because we were at sports and wouldn't be home to bake it. i layered in a slow cooker cooking bag, sauce, noodle mixture, meatballs, parmesan cheese, sauce, noodle mix, meatballs, parm cheese and the rest of the sauce and cooked it on high 2 hours. it was delicious. both my kids raved and it's a keeper!
