Gourmet Cinnamon Bun Popcorn: 12 c. air popped popcorn (more coverage only 6 c. ); 1 c. pecans, chopped (opt); ½ c. brown sugar; 1 tsp. cinnamon; ½ c. butter; ¼ c. corn syrup; 1 tsp. vanilla; ½ tsp. baking soda; 2 –4 oz. almond bark. Mix brown sugar + cinnamon in a large microwaveable bowl. Add butter + corn syrup. Microwave on high for 30 seconds, stir. Microwave 2 min. Remove, stir Microwave 2 min, remove, whisk in vanilla+baking soda. Will foam. Pour over popcorn
Marshmallow Caramel Popcorn. 1/2 c. brown sugar 1/2 c. butter 9-10 marshmallows 12 c. popcorn. Microwave brown sugar and butter for 2 minutes. Add marshmallows. Microwave until melted, 1 1/2 to 2 minutes. Pour over popcorn.
Glass bowl + ceramic plate + popcorn kernels = perfectly popped popcorn in microwave. No bag. No butter or oil. Nothing to throw away afterward. And no un-popped kernels. Put 1/4 cup dry popcorn kernels in microwave-safe glass bowl (pyrex is a great choice). Place microwave-safe plate on top of bowl. Plate should be wide enough to go beyond rim of bowl.
