Pinner: Southwest chicken!!!! We make This often... SO easy and SOOO yummy!! Chicken tenderloins-cut into small squares, 2 cups instant rice, 1 taco seasoning, 1 can rotel, grated cheese. Cook chicken in skillet. Add 1 1/2 cups water, taco seasoning and rotel. Heat to boiling. Add 2 cups instant rice. Stir, remove from heat and cover. Once water is absorbed, stir and top with cheese. Let cheese melt and voila!! Dinners served! Eat with tostitos, tortillas or by itself!

chicken enchilada puffs: 1 package crescent rolls 3 oz cream cheese 1/2 cup shredded cheese 3/4 cup cooked chicken 1/3 cup taco sauce 2 tsp taco seasoning mix 1/4 cup shredded cheese for sprinkling Preheat oven to 375° Warm cream cheese and 1/2 cup cheese. Add seasoning mix, sauce and chicken to cheese mixture and stir.Scoop 1 large heaping tablespoon of chicken mixture into the center of the crescent roll.Sprinkle tops of puffs with cheese. Bake for 15 minutes

Made this chicken on @Abu mnsar Saad Network and I love it. Serve with tortillas, pico de gallo, and beans for a marvelous Mexican meal.
