3 Heirloom tomatoes (1 1/2 pounds), large yellow
1 Red onion, small

Baking & Spices

1 1/2 tsp Ancho chile powder, pure
1 1/2 tsp Brown sugar, light
1/8 tsp Cayenne pepper
1 Kosher salt and freshly ground black pepper
2 1/4 tsp Paprika, sweet smoked

Oils & Vinegars

2 tbsp Canola oil
1/3 cup Olive oil, extra-virgin
