Orange Sour with Earl Grey Tea Foam Like sipping satin through velvet, the bright notes of Belvedere orange punch through the soft floral folds of the Earl Grey foam. 2oz Belvedere Orange 1oz Fresh lemon juice Prepare 500g of earl grey tea using the normal method. Soak 2 sheets 200 bloom gelatine and decant into a crème whipper or espuma. Charge with 1 nitrous oxide canister and chill overnight (12 hours). Shake canister vigorously before use.
