24-Hour Chicken Fiesta Salad

Gluten free • 30 mins to prepare • Serves 4

Meat

8 oz Chicken or turkey, cooked

Produce

4 oz 1 cup jicama
1/2 15 ounce can Black beans
1 clove Garlic
1 4 ounce can Green chile peppers, canned
4 cups Iceberg
1/2 cup Monterey jack cheese with jalapeno peppers
2 Tomatoes, small wedges thin

Condiments

1 Chile dressing
1/2 cup Mayonnaise or salad dressing
1/2 cup Ripe olives, pitted

Baking & Spices

1 1/2 tsp Chili powder

Snacks

3/4 cup Tortilla chips

This layered chicken salad can be prepared up to 24 hours in advance. Try it the next time you need a potluck main dish. For less spice, use plain Monterey Jack cheese.
