We always carve at least one Jack ‘O Lantern in October. The first step is to remove the top and scoop out all of the pulp and seeds from the inside of the pumpkin. We never let the seeds go to waste though. We roast them and eat them instead. If you want to roast the seeds from your pumpkin, our recipe is below. These never last long in our house.

Baked pumpkin seeds is our autumn tradition! Clean seeds throughly by running warm water over them in a colander. When clean, pat with a paper towel to remove some of the water. Put seeds in a large bowl and mix with canola oil and salt. There should be a very light coating of oil and salt on each seed. Spread seeds on baking pan and bake until light to medium golden brown. Let cool and then enjoy!
