Egg Pesto Stuffed Tomatoes. Recipe calls for romaine but I would use basil :) These could be the centerpiece of a delicious breakfast salad if served on a bed of mixed greens/spinach with crispy bacon/prosciutto, and some veggies such as sauteed mushrooms, green onion, roasted red pepper...whatever suits your fancy.. and drizzled with a lemon vinaigrette.
