Crock Pot Mexican Tortilla Lasagna

Gluten free • 2 hrs and 30 mins to cook

Meat

1 lb Ground turkey, lean

Produce

1 cup Carrots
1/4 cup Cilantro
1 cup Corn, frozen kernels
1 Garlic clove
1 Onion, large

Refrigerated

1 Egg, large

Condiments

2 16 oz jar Salsa, mild chunky

Baking & Spices

1/2 tsp Chili powder
1 tsp Kosher salt

Oils & Vinegars

1 tbsp Olive oil

Nuts & Seeds

1 tsp Cumin, ground

Bread & Baked Goods

1 12 oz pkg. Corn tortillas

Dairy

2 cups Mexican cheese blend
1/2 cup Sour cream

I made this yesterday. Pretty good! A few tweaks: No carrots (?); add garlic w/ onions; add black beans and strips of raw poblano pepper (not hot, just flavor); add 1 or more diced, seeded jalapenos (little heat), and use good, gourmet salsa. Oh, and lots of cheese. Hubs and the kiddo inhaled it. :) @Julie Barschow

    @Heather*Proper Paige Thanks for the modification tips! I bought the ingredients, but then used them for other things before I made it. Glad to have these tips before I make it! :-)
