Sweet Potato Hummus

Vegan • Gluten free • 25 mins to make • Makes 4 cups

Produce

1 can Chickpeas
1 Garlic clove
1 Pita and crudites such as red pepper and broccoli, Whole-wheat
1 lb Sweet potatoes

Condiments

1/4 cup Lemon juice, fresh
1/4 cup Tahini

Baking & Spices

1 Salt and ground pepper, Coarse

Oils & Vinegars

2 tbsp Olive oil

Nuts & Seeds

2 tsp Cumin, ground

Sweet potato hummus via Whole Living. Serve w/raw veggies & pita. Udi's baked pizza crust cut in to wedges makes a nice gluten-free "pita" option.
