on a scale of 1-10, i give this a 10! i ended up blending the diced tomatoes (i don't care for chunky tomato soup) and i used my mini food processor to "dice" the veggies. i didn't use a crock pot, i just cooked it on my range on med/med-low and had it cook/simmer for 1 1/2 hours to let the veggies soften and the different flavors infuse with each other. i also used 1% milk and not half and half.. also didn't have fresh parmesan cheese.. i used the powdered version and it was still good. i even added some sour cream too. and one last note.. i had some leftover home made noodles from making chicken noodle soup and just cut them in little squares and put them in and it was great!
